  1. 1 canned whole kernel corn drained
  2. 1/4 cup Sir Kensington's® Avocado Oil Mayonnaise
  3. 1 tsp sugar
  4. 1/2 cup shredded mozzarella cheese
  5. Salt and pepper
  6. Tortilla chips to serve (optional)

1. In a bowl, add avocado oil mayonnaise, sugar, and a pinch of salt and pepper, mixing until well combined

2. Stir in the can of sweet corn kernels (drained) and half of the shredded mozzarella cheese with a spatula

3. Pour the corn mixture into an oven-proof dish and add the rest of the shredded mozzarella cheese on top

4. Put into a 350°F preheated oven for 5-10 minutes until all the cheese has melted

5. Remove from the oven and serve right away with some tortilla chips or enjoy spoonful's straight from the dish!
