Alphonso Mango Cheesecake Cups

INGREDIENTS

  • 1 pint Talenti Alphonso Mango Sorbetto (Link opens in new window.)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar (or to taste)
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 1 cup whipped cream
  • 2–3 fresh passion fruits, halved
  • Mango slices (optional)

INSTRUCTIONS

  1. In a small bowl, mix the graham cracker crumbs with melted butter until evenly coated. The crumbs should hold together when pressed, without feeling greasy.
  2. Divide the crumb mixture evenly among 4 serving glasses or jars. Press lightly with the back of a spoon to form the base layer. Chill in the fridge for 15 minutes to set.
  3. Meanwhile, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  4. Spoon or pipe a layer of the cream cheese mixture over the chilled graham cracker base. Smooth out the top with the back of a spoon.
  5. Add a generous scoop of Talenti Alphonso Mango Sorbetto.
  6. Top with a dollop of whipped cream.
  7. Add fresh mango slices for extra mango flavor, if desired.
  8. Scoop the pulp of 2–3 passion fruits and drizzle over for a burst of tartness.
  9. Serve immediately.
