Banana Oatmeal Cookies

Ingredients
- 1 Magnum Double Salted Caramel pint (Link opens in new window.)
- 1 1/4 cup oatmeal
- 9 tbsp butter soft
- 2 1/2 oz raisins
- 1 overripe banana, peeled and smashed with a fork
- 1/2 cup light brown sugar
- 3/4 cup flour
- Salt, ground cinnamon
- 1 tsp baking soda
Directions
- Preheat oven to 170 °C
- Mix soft butter with sugar for 1 minute with kitchen aid or hand mixer
- Add the banana and mix for a couple of seconds
- Add the flour, baking soda, oatmeal, pinch of salt and 1 tsp of cinnamon and mix for 30 seconds, add raisins and mix another 10 seconds, the dough is a bit sticky
- Use a baking tray lined with baking paper
- Make small balls with your hands, and place them on the baking paper, leave some space between the balls because them will triple in size
- You should make around 12 cookies, bake them for 12 -18 minutes depending on the oven
- Let them cool down before using them. Cookies will stay a bit chewy
- Take a Magnum double salted caramel pint
- Scoop ice cream on one cookie and press another one on top
- Repeat this with the other cookies and serve
