Banana Oatmeal Cookies

Prep Time: 45 mins     Serves: 6 people

  1. Preheat oven to 170 °C
  2. Mix soft butter with sugar for 1 minute with kitchen aid or hand mixer
  3. Add the banana and mix for a couple of seconds
  4. Add the flour, baking soda, oatmeal, pinch of salt and 1 tsp of cinnamon and mix for 30 seconds, add raisins and mix another 10 seconds, the dough is a bit sticky
  5. Use a baking tray lined with baking paper
  6. Make small balls with your hands, and place them on the baking paper, leave some space between the balls because them will triple in size
  7. You should make around 12 cookies, bake them for 12 -18 minutes depending on the oven
  8. Let them cool down before using them. Cookies will stay a bit chewy
  9. Take a Magnum double salted caramel pint
  10. Scoop ice cream on one cookie and press another one on top
  11. Repeat this with the other cookies and serve
