Ingredients List
  1. 2 Tbsp. vegetable oil
  2. 1 large green bell pepper, finely chopped
  3. 1 small onion, finely chopped
  4. 2 large cloves garlic, minced
  5. 1/2 tsp. ground cumin
  6. 2 cups water
  7. 1 can (15 oz.) low sodium black beans, undrained
  8. 2 tsp. Knorr® Chicken flavor Bouillon
  9. 1 bay leaf
  10. 1 cup regular rice or converted rice
  11. 2 Tbsp. chopped fresh cilantro leaves or parsley leaves

1. Heat oil in large nonstick skillet over medium-high heat and cook green pepper and onion, stirring occasionally, until tender, about 6 minutes. Add garlic and cumin and cook, stirring until fragrant, about 30 seconds.

2. Add water, black beans, Knorr® Chicken flavor Bouillon and bay leaf and bring to a boil over high heat. Stir in rice; reduce heat to low and simmer covered 20 minutes or until rice is tender. Remove bay leaf and stir in chopped cilantro.
