Ingredients List
  1. 2 Tbsp. olive oil
  2. 2 lbs. boneless, skinless chicken breasts, cut into bite-size pieces
  3. 2 tsp. ground cumin
  4. 2 cans (15.5. oz.ea.) low-sodium chickpeas, rinsed and drained
  5. 2 orange or yellow bell peppers
  6. 1 cup chopped onion
  7. 4 cups water
  8. 1 Knorr® Chicken Broccoli Rice Side
  9. 1/4 cup crumbled feta cheese

1. SEASON chicken with cumin and if desired, salt and pepper. Heat oil in large deep sided nonstick skillet over medium-high heat and cook chicken, in batches, stirring occasionally, until thoroughly cooked, about 5 minutes per batch. Remove and set aside.

2. ADD peppers and onion to same skillet and cook, stirring occasionally, until vegetables begin to soften, about 3 minutes. Stir in chickpeas and cook 3 minutes. Remove and set aside.

3. ADD water and Knorr® Chicken Broccoli Rice Family Pack to same skillet and bring to a boil. Reduce heat and simmer covered 7 minutes or until rice is tender. Stir in chicken, chickpea mixture and feta. Garnish, if desired, with chopped parsley and lemon wedges; now it's delicious. Dig in!
