- 6 Tbsp. olive oil
- 3 1/2 cups diced peeled butternut squash
- 1 1/2 lbs. potatoes, diced
- 1 large poblano pepper, diced
- 1 cup chopped onions
- 6 cups water
- 1 pouch Knorr® Sopa Mexicana Mestiza
- 6 cups baby spinach leaves
- Toppings (optional): Reduced fat sour cream, diced avocado, cilantro leaves, tortilla chips
Directions
Print1. Heat olive oil in large pot over medium-high heat and cook butternut squash, potatoes, poblano pepper, and onion, stirring occasionally until starting to soften, about 7 minutes.
2. Add water and bring to a boil. Stir in Knorr® Sopa Mexicana Mestiza; reduce heat and simmer 10 minutes, stirring occasionally, or until vegetables are tender. Stir in spinach until wilted.Serve with your desired toppings.
