Ingredients List
  1. 6 Tbsp. olive oil
  2. 3 1/2 cups diced peeled butternut squash
  3. 1 1/2 lbs. potatoes, diced
  4. 1 large poblano pepper, diced
  5. 1 cup chopped onions
  6. 6 cups water
  7. 1 pouch Knorr® Sopa Mexicana Mestiza
  8. 6 cups baby spinach leaves
  9. Toppings (optional): Reduced fat sour cream, diced avocado, cilantro leaves, tortilla chips

1. Heat olive oil in large pot over medium-high heat and cook butternut squash, potatoes, poblano pepper, and onion, stirring occasionally until starting to soften, about 7 minutes.

2. Add water and bring to a boil. Stir in Knorr® Sopa Mexicana Mestiza; reduce heat and simmer 10 minutes, stirring occasionally, or until vegetables are tender. Stir in spinach until wilted.Serve with your desired toppings.
