Skillet Noodles with Fresh Vegetables

Cook up Knorr’s delicious Skillet Noodles with Fresh Vegetables. A recipe that’s quick and easy to make but flavorful to eat!

Ingredients List
  1. 2 Tbsp. margarine
  2. 1 clove garlic, finely chopped
  3. 1 cup sliced and quartered eggplant *
  4. 1 medium red bell pepper
  5. 1 green onion, sliced
  6. 1 Tbsp. dry white wine (optional)
  7. 1 1/4 cups water
  8. 3/4 cup milk
  9. 1 package Knorr® Pasta Sides™ - Chicken flavor
  10. 1/2 cup shredded vegan mozzarella-style shreds

1. Melt margarine in large skillet and cook garlic until golden. Stir in eggplant, red pepper and green onion. Cook over medium heat, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in wine and cook 1 minute. Stir in water and bring to boil. Stir in milk and Knorr® Pasta Sides™ - Chicken flavor. Cook over low heat, stirring occasionally, 7 minutes. Remove from heat, then sprinkle with cheese. Cover and let stand 1 minute or until cheese is melted.
