Longevity Noodles

The long noodles in this dish represent "long life" and blessings to loved ones. With the help of Knorr® Chicken Broth Mix, this simple dish has loads of flavors even without a protein. It’s perfect for any special occasion table from birthdays to Lunar New Year.
Ingredients List
- 226 grams of Yee Mein/Long Life Noodles
- 8 dried shiitake mushrooms rehydrated in warm water for 30 minutes and sliced
- 1 cup of carrot julienned
- 1 bunch of green onions or chives (yellow or green) cut into 1.5-inch pieces
- 1/2 cup of bamboo shoots julienned (optional)
- 1 tbsp of oil
- Knorr Chicken Broth Mix
- 1/4 tsp of sugar
- 1/2 tsp of Knorr Liquid Seasoning
- 1/2 tsp of dark soy sauce
- 1 tsp of oyster sauce
- 1 tsp of Shaoxing rice wine
- 1/4 cup of water
DIRECTIONS

In a large pot of boiling water, cook the yee mein or long lifelong-life noodles according to package directions. For chewier noodles, remove from boiling water 1-2 minutes before it’s fully cooked. Drain and set aside.

In a small bowl, combine all of the sauce ingredients and mix well.

Heat 1 tbsp of oil in a wok over medium high heat. Add mushrooms, carrots, bamboo shoots and stir fry until fragrant.

Add sauce and mix thoroughly.

Add the noodles and stir fry until the noodles have soaked up all the sauce. Add chives/green onions and toss for another 30 seconds.

If the noodles become too dry, add a bit of water or oil. Try not to break the noodles as you’re tossing them!

Plate noodles onto a large serving plate and enjoy!
