Night Night Banana Bites

Looking for something to munch on in the evening? Best-selling cookbook author, Melissa Hemsley, has shared these lovely little quick bites to enjoy with a mug of Night Time tea in the evening. They take 10 minutes to prep and 10 minutes to bake and you only need 5 everyday cupboard ingredients plus a delicious sprinkle of Pukka Night Time Latte blend, a mix of chamomile, lavender, cinnamon and nutmeg. These are also vegan and gluten free.
Ingredients List
- 1 large overripe banana
- 200 grams oats gluten free if needed
- 2 tbsp coconut oil or butter
- 3 tbsp nut butter or seed butter if allergic to nuts
- 2 tbsp dried fruit
- 2 tbsp Pukka Night Time Latte powder (a delicious mix of chamomile, lavender, cinnamon, nutmeg and ashwagandha)

Preheat oven to 190C.

Toast the oats in the melted coconut oil in a medium saucepan for a few minutes to achieve a nice, toasted flavour.

Lower the heat right down and add everything else to the pan and mix together until combined.

Lay out a baking sheet on a large baking tray and spoon out 2 tsp of the mix then flatten slightly with the back of the spoon/palm of your hand (pushing down any dried fruit into the mix as it might burn if left on top).

Bake for 10 minutes until golden and leave on a wire rack to cool.

Store in a tin or tight-fitting container, somewhere cool, for up to 5 days.
