Caponata Spread

  1. 1 1/2 Tbsp. vegetable oil
  2. 1 medium eggplant, diced (about 4 cups)
  3. 1 medium onion, chopped
  4. 1 1/2 cups water
  5. 1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
  6. 2 Tbsp. chopped fresh parsley leaves (optional)
  7. Salt and ground black pepper to taste
  8. Pita chips or thinly sliced Italian or French bread

1. In large nonstick skillet, heat oil over medium heat and cook eggplant with onion, stirring occasionally, 3 minutes. Add 1/2 cup water. Reduce heat to low and simmer covered 3 minutes. Stir in Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix blended with remaining 1 cup water. Bring to a boil over high heat. Reduce heat to low and simmer uncovered, stirring occasionally, 20 minutes. Stir in parsley, salt and pepper. Serve with sliced bread.
