Ingredients List
  1. 1 lb. potatoes, peeled and cubed
  2. 3 cups shredded cooked chicken
  3. 1 medium Granny Smith apple, peeled, if desired, and chopped
  4. 1 carrot, peeled and chopped
  5. 1/3 cup chopped celery
  6. 1/4 cup finely chopped onion
  7. 3/4 cup Hellmann’s® or Best Foods® Real Mayonnaise with Lime Juice
  8. 15 pimento stuffed green olives, quartered (optional)
  9. 2 tbsp. sofrito
  10. 1/2 tsp. salt

1. Cover potatoes with water in 2-quart saucepan. Bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender; drain and cool slightly.

2. Meanwhile, combine remaining ingredients except potatoes in large bowl. Add potatoes and toss gently. Serve chilled or at room temperature.
