- 1 pouch Knorr® Sopa Mexicana Minestrone
- 2 tbsp. olive oil
- 1 lb. potatoes, diced
- 3/4 cup chopped onions
- 2 large carrot, diced
- 6 cups water
- 3 ears corn-on-the-cob, each cut into 4 pieces
- 3 cups shredded green cabbage
- 1 pouch Knorr® Sopa Mexicana Chicken with Rice
- 2 1/2 cups diced cooked chicken breast or thighs
- 1/2 cup chopped fresh cilantro
- Lime wedges
Directions
Print1. Heat olive oil in large pot over medium-high heat and cook potatoes, onion, and carrot, stirring occasionally, until starting to soften, about 7 minutes.
2. Add water and bring to a boil. Stir in cabbage and Knorr® Sopa Mexicana Chicken Flavor With Rice; reduce heat and simmer 10 minutes, stirring occasionally, or until vegetables are tender. Stir in chicken until heated through. Remove from heat and stir in cilantro. Serve with lime wedges.
