Ingredients List
  1. 3 lb beef chuck roast
  2. 2 tbsps olive oil
  3. 1/2 tbsp salt
  4. 1/2 teaspoon black pepper
  5. 1/4 cup Maille® Dijon Original Mustard
  6. 2 cups beef broth
  7. 2 cups baby potatoes
  8. 3 carrots chopped in chunks
  9. 2 sprigs rosemary plus more to serve
  10. 2 sprigs oregano plus more to serve

1. Preheat the oven to 300 degrees F.

2. Pat chuck roast dry. Season with salt, pepper, and rub with Maille Dijon Original mustard.

3. Heat olive oil in a large Dutch oven. Sear chuck roast on all sides until browned.

4. Add beef broth, potatoes, carrots, rosemary, and thyme to the Dutch oven.

5. Cover Dutch oven and cook for 3 hours, or until beef falls apart. Serve with fresh rosemary and oregano.
