Skillet Potato Medley
Ingredients List
- 2 Tbsp. oil
- 1 lb. red potatoes, peeled, if desired, and cut into 1-inch pieces
- 3 ribs celery, halved lengthwise and cut into 1/2-inch pieces
- 3 medium carrots, halved lengthwise and cut into 1/2-inch pieces
- 1 envelope Lipton® Recipe Secrets® Onion Soup Mix
- 1 cup water
- 2 Tbsp. cider vinegar or red wine vinegar
Directions
Print1. Heat oil in large skillet over medium-high heat and cook potatoes, celery and carrots, stirring occasionally, 2 minutes. Stir in Lipton® Recipe Secrets® Onion Soup Mix blended with water and vinegar. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 20 minutes or until potatoes are tender. Garnish, if desired, with chopped fresh parsley.
