- 1 medium orange
- 2 Tbsp. Knorr® Chicken Concentrated Stock
- 2 Tbsp. olive oil
- 1 Tbsp. grated ginger
- 1 1/4 lbs. boneless, skinless chicken thighs
- 2 large carrots, sliced 1/3 in/6mm thick
- 1 lb. baby bok choy, halved
- 1 tsp. toasted sesame seeds
Directions
Print1. Preheat oven to 425°. Line large rimmed baking sheet with parchment paper and spray with no-stick cooking spray.
2. Grate 1 tsp.peel and squeeze 1/4 cup juice from orange. Add to large bowl. Combine with Knorr® Chicken Concentrated Stock, olive oil and ginger. Add chicken, carrots and bok choy and toss to coat.
3. Spoon chicken, vegetables and liquid remaining in bowl onto prepared baking sheet. Bake 30 minutes or until chicken is thoroughly cooked. Sprinkle with sesame seeds and garnish, if desired, with sliced green onions.
