- 1 1/2 lbs. Red Bliss potatoes or thin skin potatoes
- 1 cup Hellmann’s® or Best Foods® Mayonnaise Light Mayo
- 1/2 cup milk
- 8 Tbsp. grated Parmesan cheese, divided
- 1/4 cup fresh chives, chopped
- 1/2 tsp. cracked black pepper
Directions
Print1. Preheat oven to 350°.
2. Cover potatoes with cold water and bring to a boil over high heat in 3-quart saucepan. Reduce heat to low and simmer uncovered 15 minutes or until potatoes are fork-tender. Drain and cool.
3. Thinly slice potatoes and arrange in 13 X 9-inch baking dish; set aside.
4. Combine Hellmann's® or Best Foods® Light Mayonnaise, milk, 6 tablespoons cheese, chives and pepper in medium bowl. Evenly spoon mixture over potatoes. Top with remaining 2 tablespoons cheese.
5. Bake 25 minutes or until golden brown and bubbling.
