- 1 lb. lean ground turkey or beef
- 2 Tbsp. Knorr ® Beef Concentrated Stock
- 1 Tbsp. Knorr ® Za'atar Seasoning Blend
- 1 Tbsp. olive oil
- 1 medium zucchini, sliced lengthwise 1/4-in thick
- 1 medium yellow squash, sliced lengthwise 1/4-in thick
- 1 large red bell pepper, quartered, seeded
- 1 small red onion, quartered
- 1 can (15 oz.) low sodium lentils, rinsed and drained
Directions
Print1. Combine ground turkey, 1 Tbsp. Knorr® Beef Concentrated Stock and Knorr® Za’atar Seasoning Blend in large bowl; form into 4 oval shaped patties (kofte).
2. Combine remaining 1 Tbsp. Stock and olive oil in large bowl; add vegetables and toss to coat.
3. Grill vegetables 10 minutes, turning once, and kofte 15 minutes, turning once until kofte are thoroughly cooked and vegetables are lightly charred and tender.
4. Cool vegetables slightly and coarsely chop. Combine with lentils and arrange on serving platter. Top with kofte and serve, if desired, with plain yogurt, lemon wedges and chopped parsley or mint.
