Low-Carb Frozen Raspberry Mocha Cups | Breyers
A festive frozen raspberry mocha cup made with Breyers CarbSmart™. Indulge in rich mocha and raspberry flavors without the extra carbs.
- 1 pint Breyers® CarbSmart chocolate
- 1 cup fresh or frozen raspberries (for raspberry sauce)
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon instant coffee granules
- 1/4 cup heavy whipping cream
- 2 tablespoons sugar substitute
- 1 teaspoon vanilla extract
- fresh raspberries (optional)
- dark chocolate shavings (optional)
- Sugar-free chocolate sauce (optional)
Directions
Print1. Start with the raspberry sauce. In a small saucepan over medium heat, combine the raspberries and 1 tablespoon of sugar substitute. Cook for about 5 minutes, stirring occasionally, until the raspberries break down into a smooth, sauce-like consistency.
2. Remove the raspberry sauce from heat and strain through a fine mesh strainer to remove the seeds. Set aside to cool.
3. In a separate small bowl, mix the unsweetened cocoa powder and instant coffee with 2 tablespoons of hot water until it’s dissolved.
4. Add the vanilla extract and stir well.
5. In a separate bowl, whip the heavy cream with the remaining sugar substitute until soft peaks form. Set aside.
6. Now it’s time to assemble. In each serving cup, layer a scoop of Breyers CarbSmart™ Chocolate.
7. Drizzle the mocha mixture over the frozen dessert.
8. Spoon a layer of raspberry sauce on top.
9. Add a dollop of whipped cream.
10. Optionally, garnish with a few fresh raspberries, dark chocolate shavings (if using a bar, use a peeler to make your shavings) and a light drizzle of chocolate sauce.
