
Pick Your Flavor Ice Cream Sandwiches Recipe
Co-created with So Yummy, this recipe uses cocoa, matcha and peanut butter cookies paired with Breyers® for a unique assortment of ice cream sandwiches!
- 1 log refrigerated sugar cookie dough
- 1 Tbsp. peanut butter
- 1 Tbsp. matcha green tea powder
- 1 Tbsp. cocoa powder
- 1 cup Breyers® Mint Chocolate Chip Ice Cream
- 1 cup Breyers® Natural Strawberry Ice Cream
- 1 cup Breyers® Chocolate Ice Cream
- ¼ cup chopped mint chocolate candies
- ¼ cup chopped roasted peanuts
- ¼ cup chopped freeze dried strawberries
Directions
Print1. Mix: Divide your cookie dough into thirds. In one bowl of cookie dough, mix in peanut butter. In the next bowl, mix in Matcha (try to use sweet Matcha, it’s lighter and less earthy looking than most Matchas). In the third bowl mix in cocoa powder.
2. Roll & Bake: Roll the cookie dough into 1 or 2 inch balls (depending on how big you want your cookies) and bake according to package instructions.
3. Pair Ice Cream & Cookies: Allow the cookies to cool and then scoop ice cream onto the cookies. Breyers® Mint Chocolate Chip Ice Cream goes with the cocoa cookies, Breyers® Natural Strawberry Ice Cream goes with the Matcha cookies, and Breyers® Chocolate Ice Cream goes with the peanut butter cookies.
4. Roll in Toppings: Sandwich the cookies and roll into toppings: Stawberry-Matcha in the strawberries, Cocoa-Mint Chocolate with the mint candies, and Chocolate-Peanut Butter in the peanuts. Roll once or twice to ensure the toppings stick to the ice cream.
