Ingredients List
  1. 1 Tbsp. vegetable oil
  2. 1 large green bell pepper, finely chopped
  3. 1 cup finely chopped cooked ham
  4. 1/4 cup finely chopped onion
  5. 2 tbsp chopped green onion
  6. 1 tbsp chopped garlic
  7. 2 large tomatoes chopped
  8. 1 can (15 oz) pigeon peas, rinsed and drained
  9. 5 cups water
  10. 2 Knorr® Bouillon Cubes Tomato With Chicken Flavor or 2 Tbsp. Knorr® Granulated Bouillon Chicken
  11. 1/2 tsp annatto or artichoke paste
  12. 2 cup uncooked rice
  13. 1/4 cup chopped fresh cilantro

1. Heat oil in large heavy saucepan or Dutch oven over medium-high heat and cook green pepper, ham, onion, green onions and garlic, stirring occasionally, 3 minutes or until vegetables are crisp-tender.

2. duce heat to medium-low and stir in tomatoes and pigeon peas. Cook, stirring occasionally, 2 minutes.

3. Stir in water, Bouillon and annatto (if using) and bring to a boil over high heat, stirring to dissolve Bouillon

4. Stir in rice and cilantro; reduce heat to low and simmer covered 20 minutes or until rice is tender.

5. Garnish, if desired with sliced green onions.
